- 3 cups Makhana
- powdered turmeric
- powdered red pepper
- Masala de Chaat con Sal (Salt Chaat Masala)

Method
- In a saucepan, melt the ghee or oil and roast the nuts for about 11 minutes over low heat. Continue to stir.
- Toss in all of the spices. Turn off the heat and toss the nuts away carefully.
- Add additional Chaat Masala if necessary. Mix thoroughly.
- Cool immediately in an airtight container before using.
- You can even dry it if you don’t want to use ghee or oil. Spices, on the other hand, do not mix well and can leave a bitter aftertaste. Makhana tastes better when made with ghee or oil.

Ingredients
- Yogurt or quark — 1/2 cup black pepper powder — 1 cup pomegranate seeds — half a teaspoon

Ingredients
- 1 cup Onion — Makhana Peas 1 cup red pepper powder (optional) — 1 tablespoon coriander powder — 2 large chopped tomatoes puree
- 1 dessert: garam masala
Method
- Place the Makhana in a preheated skillet and roast until crisp. Place on a platter and set away.
- Sauté half of the chopped onions and garlic in oil until gently browned. Turn off the heat and add the cashews, which have been warming in the tub. Allow the ingredients to cool before mixing in a paste with a little water in the mixer.
- 2 tablespoons caraway
- 1 tablespoon turmeric 1 tablespoon cashew nut
- In a saucepan, heat some additional oil. Add the sesame seeds and toss them around until they shatter. Half of the chopped onions should be added to the pan and fried. Fill the mould with the onion paste. For 3–4 minutes, it’s always good.
- Combine the tomato puree, turmeric, coriander powder, and fresh powder in a large mixing bowl. Mix thoroughly. Cook, covered, until the oil has completely dissolved.
- Half a cup of water, peas, and salt are added. Simmer for 4–5 minutes with the lid on the pan. In a saucepan, heat some additional oil. Add the sesame seeds and toss them around until they shatter. Ingredients
- 4 medium cooked and mashed potatoes
- 1 cup fox nuts 2 coarsely chopped green peppers
- 2 tablespoons grilled peanuts, coarsely crushed coriander leaves — handle, 1 teaspoon finely chopped Fennel seed powder
Method
- Begin burning fox nuts in ghee until they are crunchy. Roughly coat the seeds.
- In a mixing basin, combine the coarsely crushed Makhana, mashed potatoes, and the remaining ingredients. Mix thoroughly. To taste, adjust the salt and spices.
- Make round or oval patties out of the mixture. Lightly sauté in a skillet until golden brown on both sides.
Serve with ketchup or chutney made from pudina.
